Spring Sweet Pea Salad

- 1 5 oz Spring Mix Bag Salad
- 1 6 oz Bag of Fresh Peas
- 1 6 oz Bag of Pea Pods you'll only need about a 1/4 cup
- 1/3 cup Rainbow Carrots sliced
- 1 4 oz Goat Cheese Crumbles
- 1 tbsp Fresh Mint chopped
Lemon Dijon Dressing
- 2 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1 tbsp Dijon Mustard
- 1/2 tsp Honey
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/8 tsp Garlic Powder
Lemon Dijon Dressing
In a small bowl, combine the 2 tbsp of olive oil, 2 tbsp of lemon juice, 1 tbsp of dijon mustard, 1/2 tsp of honey, 1/4 tsp each of salt & pepper, and 1/8 tsp of garlic powder. Whisk until everything is thoroughly combined!
Assemble the Salad
First, wash and slice the rainbow carrots into 1/4" rounds. You'll only need about a 1/3 cup of carrot slices for the salad. Also, mince up 1 tbsp of fresh mint!
Next, begin assembling the salad by laying down a bed of spring mix greens. After this, sprinkle about a 1/4 cup of peas evenly over the top of the greens, followed by as many pea pods as you'd like. Then, lay the carrot rounds all around! Follow this up with all the fresh mint, and finally, the goat cheese crumbles.
Drizzle your homemade Lemon Dijon dressing all over the top and serve!
