These Chocolate Chip Cake Mix Cookies are so quick to make and they taste amazing!

With seriously only five ingredients you’ll be enjoying a warm, melt-in-your-mouth, chocolatey cookie in less than 20 minutes. I’m currently sitting here drinking my morning cup of coffee and enjoying one too!
The heat has finally subsided some here in Tennessee and I’ve got my windows open letting in some fresh air! Dare I say it…it feels a little bit like Fall this morning 😯🤫😍. I know it’s just teasing us and we’ve got at least all of August to go, but I can’t wait! It’s truly the best season – for clothes, holidays, food… Everything! I can’t wait!
In the meantime, let’s make some Chocolate Chip Cake Mix Cookies!
The first ingredient in these Chocolate Chip Cake Mix Cookies
is … yep you guessed it – a box of vanilla cake mix!
Pre-made cake mix that comes in a box from the store is essentially just the dry ingredients for every cake (or cookie) recipe. It’s flour, sugar, and a leavening agent like baking soda/powder.
The only difference between using it to bake a cake, or using it to bake cookies is the amount of liquid added to the mix! Adding just the two eggs and 1/2 cup of butter makes the cake mix thick like cookie batter!
So throw the cake mix in your mixer, add the room temperature butter, 2 eggs, and a cup of oatmeal, and mix everything! Finish by stirring in a cup of chocolate chips and you’re ready to bake!
Side note: if you don’t like oatmeal in your cookies, you can just leave it out. You don’t even need to change anything else about the recipe to compensate. The cookies will just spread out more while baking than if you’d left the oatmeal in. Since these cookies are based on a cake mix, they are cakey cookies!
If you love thinner, flatter, crispier cookies, these might not be for you! My hubby will eat these, I mean they’re still delicious chocolate chip cookies, but he still prefers an old-fashioned chocolate chip.
That’s ok, to each their own, lol. I love these more!
Once the Chocolate Chip Cake Mix cookie batter is ready,
simply plop them on a parchment-lined baking sheet and bake at 350 degrees for 10-12 minutes.
The batter for these is stiff and sticky. The cookies won’t collapse and spread very much while they’re baking so you don’t have to leave a whole lot of room between the cookies on the baking sheet.
The vanilla cake mix also keeps them from browning like a classic chocolate chip cookie. So if you’re waiting for them to turn that color, then you will have overbaked them!
They’re ready to come out of the oven when the edges look slightly brown. They will harden up more as they cool.
That’s it!
Truly you could grab any cake mix off the shelf and make a cookie with it!
The possibilities are endless 🤔. The recipe will make 24 smaller cookies.
I usually end up freezing a portion of them, they will keep for a couple of months in the freezer.
Whenever you’d like a cookie, pull a frozen one out, put it in the microwave for 5 seconds, and you’re good to go!

- 1 15.25 oz Box of Vanilla Cake Mix
- 1/2 Cup Salted Butter room temperature
- 2 Eggs room temperature
- 1 Cup Rolled Oats
- 1 Cup Chocolate Chips
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Pour the entire package of vanilla cake mix into the mixer and add the stick (1/2 cup) of room temperature salted butter, 2 eggs, and a cup of rolled oats. Mix thoroughly. Stir in 1 cup of chocolate chips.
Use a regular size spoon and scoop onto a baking sheet. Make sure to leave 1/2″ of room between the cookies so they don’t bake together. Place the baking sheet on the middle rack of the oven and bake for 10-12 minutes. The cookies are done with the edges look slightly brown.
Remove from the oven and cool on a cooling rack. Repeat until all 24 cookies are baked.
Enjoy with a glass of milk or a cup of coffee!
