Well, we made it to Friday! Maybe this Mezcal Honey Lime Margarita is just what we need to kick the weekend off!

A couple of weeks back, a Facebook group I’m a part of had a week-long photo challenge for drink photography. Food photography in general isn’t as easy as it looks! But then when you step into the realm of taking pictures of drinks… it’s a whole other beast!
Glassware picks up and reflects the craziest stuff! Things you didn’t even remember were in the room are showing up in your wine glass. Not to mention all the different and best ways to go about lighting the drinks. Anyway, it was a lot of fun and there are some very talented people out there!
My forte is still drinking the drinks, I think. And I’m ok with that! lol Especially when it comes to this Mezcal Honey Lime Margarita. I know some people aren’t a fan of Mezcal’s smokiness. But when you pair it with the right ingredients, it’s really quite lovely! Even if you’re not a huge fan of Mezcal, this Mezcal Marg may change your mind!
The first thing you need for this Mezcal Marg is a honey simple syrup.
Emphasis on the simple. You literally just need a 1/2 cup of hot water mixed into a 1/2 cup of honey. Simple right?
I’ve never thought about mixing honey and tequila before, but it’s a fantastic pair!
This cocktail recipe actually comes from By Gabriella, her Honey & Smoke Mezcal Cocktail.
I’ve simply added pineapple wedges and tajin to her already tasty creation!
Now to make the Mezcal Marg.
Dust off your cocktail shaker!
Run a lime around the rim of your glass, pour some tajin on a plate, and dip the cup in it.
Fill the glass up with ice so it’s ready to go!
Next, to the cocktail shaker, add 1 oz Mezcal, 1 oz honey simple syrup, 1 1/2 oz lime juice, ice, and give it all a shake!
Strain it into your prepped glass and top it off with ginger ale! My favorite is Seagrams, but take your pick!
I had this grand idea of smoking pineapple garnishes.
I bought a whole pineapple, sliced it up, and was so excited to take pictures of this grilled, smoking pineapple sitting on top of the glass. So first I tried laying it on our gas stovetop, ya know, just giving it a little singe there… I thought it was going to come off with like perfect grill marks, looking straight out of a commercial… it did nothing lol.
I didn’t give up though! I got out my kitchen blow torch, the kind that’s for toasting meringue or the tops of creme brûlée’s and tried to light it up that way… Well, pineapple is wet and mostly just smolders.
So at the end of the day, the pineapple garnish was delish and went super well with the honey, lime, and mezcal. But it did not put on a smoke show for my drink photos lol. I do think the evening sun shining through the glasses is dreamy though.
When I look at these drink pictures,
I can almost imagine I’m sitting on a tropical, evening sun-drenched patio somewhere without a care in the world. Drinking my honey, lime, mezcal marg just enjoying life!
While the tropical vacation part might be slightly out of reach, it is in fact still Friday! And I do have a patio. And I do have all the ingredients for this drink…

Mezcal Marg
Rim your glasses with tajin! It’s time for a smokey honey, lime, and ginger Mezcal Margarita!
Servings: 4 drinks
Cocktail Shaker
Cutting Board & Knife
Tea Pot
Glasses
Honey Simple Syrup
- 1/2 Cup Honey
- 1/2 Cup Hot water
Mezcal Margarita
- 1 oz Mezcal
- 1 1/2 oz Lime Juice
- 1 oz Honey Simple Syrup
- 1 Can Gingerale
- 1 Lime cut into slices
- 1 Pineapple sliced and cut into wedges
Mezcal Marg
Cut lime slices and pineapple wedges for garnish!
Run a lime slice along the rim of your glass. Pour tajin on a plate and dip the glass rim in the tajin to coat it. Then fill the glass up with ice.
In a cocktail shaker, add 1 oz of mezcal, 1 oz of honey simple syrup, 1 1/2 oz of lime juice, and ice. Shake!
Strain into the glass with ice and top off with gingerale. Garnish with lime and pineapple! Enjoy!
