This Spring Sweet Pea Salad is my last-minute Easter table offering!

If you’re still in need of some side dishes to go alongside the ham for tomorrow’s Easter dinner, this Spring Sweet Pea Salad is a beautiful and delicious choice!
Did I mention it doesn’t take any time at all to throw together?
I love sweet peas! I love that they are one of the first things to pop up in the garden! I love their cute little flowers and their sweet crunch!
They pair perfectly with this salad’s homemade lemon dijon dressing, goat cheese crumbles, and chopped mint!
I know you’re probably thinking mint?
Yes, mint! Trust me, it isn’t overpowering and adds just a bit of fresh interest to the taste.
I think you’re gonna like it!
If you’re feeding a large crew tomorrow feel free to adjust the ratios to make a bigger salad and more dressing!
Let’s get to it! (not a lot to get to here, likely a short post lol)
For the Lemon Dijon Dressing
that goes on this Spring Sweet Pea Salad, you probably already have all the ingredients in your fridge and pantry. I’ve started making my own salad dressings lately in an attempt to control what goes in it!
My husband and I have been trying to limit sugar and oils like sunflower and other vegetable oils. Olive oil is so good for you and homemade dressings are easier than you think!
You just whisk up the olive oil, lemon juice, dijon, a little bit of honey, and seasonings! As I mentioned above, if you are making a larger salad, this dressing recipe can be doubled so it goes further! If you have extra at the end of the meal, it can be stored in the fridge for later use.
For this Spring Sweet Pea Salad,
I used rainbow carrots. I just think they are fun and love the splash of color they add to the dish!
I was looking for a bunch that still had the stems but unfortunately could only find a bag of precut baby carrots.
If you can’t find rainbow carrots at all, that’s ok too, traditional carrots will work just as well and still taste great!
I only ended up needing about a 1/3 cup of carrot slices for my salad, you can add more or less depending on how you want it!
I know I said it above, but the mint really adds interest to this salad.
I’m always surprised at how much I like the fresh flavor mint brings to a dish because there’s always this fear in the back of my mind that it will just taste like toothpaste.
Mint is not just for mojitos and mouthwash lol.
It really does pair so well with the savory goat cheese crumbles, sweet peas, and tangy lemon dijon dressing!
So mince some up and try it out!

Once you get the salad assembled, as you can see from the pictures, I highly suggest pairing it with a glass of white wine or a rose!
My husband is currently traveling for work, so I had this whole dish to myself.

Spring Sweet Pea Salad
This Spring Sweet Pea Salad is as flavorful as it is colorful! Quick and easy to make, a perfect addition to your Easter table!

- 1 5 oz Spring Mix Bag Salad
- 1 6 oz Bag of Fresh Peas
- 1 6 oz Bag of Pea Pods you'll only need about a 1/4 cup
- 1/3 cup Rainbow Carrots sliced
- 1 4 oz Goat Cheese Crumbles
- 1 tbsp Fresh Mint chopped
Lemon Dijon Dressing
- 2 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1 tbsp Dijon Mustard
- 1/2 tsp Honey
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/8 tsp Garlic Powder
Lemon Dijon Dressing
In a small bowl, combine the 2 tbsp of olive oil, 2 tbsp of lemon juice, 1 tbsp of dijon mustard, 1/2 tsp of honey, 1/4 tsp each of salt & pepper, and 1/8 tsp of garlic powder. Whisk until everything is thoroughly combined!
Assemble the Salad
First, wash and slice the rainbow carrots into 1/4″ rounds. You’ll only need about a 1/3 cup of carrot slices for the salad. Also, mince up 1 tbsp of fresh mint!
Next, begin assembling the salad by laying down a bed of spring mix greens. After this, sprinkle about a 1/4 cup of peas evenly over the top of the greens, followed by as many pea pods as you’d like. Then, lay the carrot rounds all around! Follow this up with all the fresh mint, and finally, the goat cheese crumbles.
Drizzle your homemade Lemon Dijon dressing all over the top and serve!
