  • Medium Mixing Bowl
  • Whisk
  • Measuring Cups
  • Measuring Spoons
  • Cooking spray or melted butter
  • Spatula

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp Maple Bacon seasoning
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup unsalted butter melted
  • 1/4 cup maple syrup plus extra for serving
  • 1/2 cup cooked bacon crumbled (optional for extra texture and flavor)
  • Optional toppings: Crumbled bacon maple syrup, fresh herbs

Instructions

Preheat the Waffle Iron:

  • Preheat your waffle iron according to the manufacturer's instructions.

Prepare the Dry Ingredients:

  • In a large bowl, whisk together the cornmeal, flour, Maple Bacon seasoning, sugar, baking powder, baking soda, and salt until well combined.

Mix the Wet Ingredients:

  • In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and maple syrup. Mix until well combined.

Combine the Ingredients:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  • If using, fold in the crumbled cooked bacon for an extra burst of flavor and texture.

Cook the Waffles:

  • Lightly grease the waffle iron with cooking spray or melted butter. Pour the batter onto the preheated waffle iron, using the recommended amount for your waffle maker (typically around 1/2 to 3/4 cup).
  • Close the waffle iron and cook until the waffles are golden brown and crispy, usually about 3-5 minutes. The exact cooking time will depend on your waffle iron.

Serve:

  • Serve the waffles warm with a drizzle of maple syrup and additional crumbled bacon on top if desired. For a touch of freshness, garnish with finely chopped fresh herbs like thyme or chives.
