Ingredients

For the Dip

  • 2 Cups Frozen Peas or Fresh Peas
  • 1/2 Cup Dill Chopped
  • 1/4 Cup Parmesan Cheese grated
  • 1 Lemon about a 1/4 cup lemon juice
  • 3 tbsp Water
  • 2 tbsp Olive Oil
  • 1 Garlic Clove minced - 1/2 tsp
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

To Make the Dip

  • If you are using frozen peas, defrost them or make sure they are thawed before blending. If you are using fresh peas, blanch in boiling water for 2 minutes before blending.
  • Add 2 cups of peas, 1/2 cup of dill, 1/4 cup of parmesan, 1/4 cup of lemon juice, 3 tbsp of water, 2 tbsp of olive oil, 1/2 tsp minced garlic, and 1/4 tsp of salt and pepper each. Blend until the dip is smooth and creamy.
  • Scoop out into a dish and garnish with a drizzle of olive oil, some peas, and more parmesan if you'd like!
  • Enjoy with crackers, veggie sticks, or sourdough pretzel bites!

Notes

You can omit the 3 tbsp of water if you want a thicker dip.
