Ingredients
For the Dip
2CupsFrozen Peasor Fresh Peas
1/2CupDillChopped
1/4CupParmesan Cheesegrated
1Lemonabout a 1/4 cup lemon juice
3tbspWater
2tbspOlive Oil
1Garlic Clove minced - 1/2 tsp
1/4tspSalt
1/4tspPepper
Instructions
To Make the Dip
If you are using frozen peas, defrost them or make sure they are thawed before blending. If you are using fresh peas, blanch in boiling water for 2 minutes before blending.
Add 2 cups of peas, 1/2 cup of dill, 1/4 cup of parmesan, 1/4 cup of lemon juice, 3 tbsp of water, 2 tbsp of olive oil, 1/2 tsp minced garlic, and 1/4 tsp of salt and pepper each. Blend until the dip is smooth and creamy.
Scoop out into a dish and garnish with a drizzle of olive oil, some peas, and more parmesan if you'd like!
Enjoy with crackers, veggie sticks, or sourdough pretzel bites!
